Ingredients

Cookie Dough

  • 2 cups all-purpose flour
  • ½ cup unsalted butter softened
  • ¼ cup powdered sugar
  • ½ teaspoon vanilla extract

Filling

  • 1 cup heavy cream
  • 1 cup white chocolate melted
  • 1 teaspoon sugar for whipped cream

Instructions

Baking Instructions

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a mixing bowl, combine the softened unsalted butter and powdered sugar until creamy.
  • Add the all-purpose flour and vanilla extract, and stir until the dough forms a ball.
  • Roll the dough into small balls, flatten them slightly, and place them on the baking sheet.
  • Bake for 15–20 minutes until lightly golden.
  • Allow cookies to cool on the baking sheet for 5 minutes, then transfer to a wire rack for 30 minutes.
  • Whip the heavy cream with sugar until soft peaks form.
  • Spread melted white chocolate on one cookie, add whipped cream, and sandwich with another cookie.
  • Let the assembled cookies sit for 30 minutes at room temperature to set.

Notes

For best results, chill the butter if it's too soft, and ensure the cookies are completely cool before filling.
