Ingredients

For the Shrimp

  • 1 lb peeled and deveined shrimp
  • 2 tablespoon olive oil for searing
  • 1 lime lime juice freshly squeezed
  • 1 teaspoon ground cumin for flavor
  • salt and pepper to taste

For the Bowl

  • 2 ripe avocados diced
  • 1 large mango diced
  • 1 cup cherry tomatoes halved
  • 1 small red onion finely chopped

For Garnish

  • 1 handful fresh cilantro chopped

Step-by-Step Instructions

  • In a medium bowl, combine the shrimps with olive oil, lime juice, ground cumin, and salt & pepper. Allow to marinate for about 10 minutes.
  • Heat a skillet over medium-high heat. Add marinated shrimp in a single layer. Cook for 2-3 minutes on each side or until opaque. Remove from heat.
  • Dice the avocados and mango, halve the cherry tomatoes, and combine in a mixing bowl.
  • Add cooked shrimp to the mixing bowl and gently fold in all ingredients.
  • Serve in bowls, garnished with cilantro and additional lime juice, if desired.
