Ingredients

For the Marinade

  • ¼ cup Honey
  • ¼ cup Fresh lime juice Aim for fresh limes for the best taste
  • ¼ cup Soy sauce
  • 2 tablespoons Olive oil
  • 2 cloves Garlic Minced
  • 1 teaspoon Ground cumin
  • 1 teaspoon Paprika
  • 1 teaspoon Salt
  • ½ teaspoon Black pepper

For the Chicken and Toppings

  • 4 pieces Boneless, skinless chicken breasts
  • ¼ cup Chopped fresh cilantro For garnish
  • 1 medium Avocado Sliced
  • 2 cups Cooked rice As base for the stack
  • 2 pieces Lime wedges For serving

Instructions

Preparation Steps

  • In a medium bowl, whisk together the honey, fresh lime juice, soy sauce, olive oil, minced garlic, ground cumin, paprika, salt, and black pepper until smooth and well combined.
  • Place the chicken breasts in a large zip-top bag or shallow dish, then pour the prepared marinade over them.
  • Ensure the chicken is evenly coated by sealing the bag and gently tossing or turning the dish. Refrigerate for at least 30 minutes, ideally 2 hours.
  • While the chicken marinates, preheat your grill or grill pan over medium-high heat.
  • Remove the chicken from the marinade and place it onto the hot grill; cook for 6 to 7 minutes on one side.
  • Flip the chicken and continue grilling for another 5 to 6 minutes until cooked through.
  • Let the grilled chicken rest for about 5 minutes before slicing.
  • Slice the grilled chicken breasts and layer them over a generous bed of cooked rice on a serving plate.
  • Top the chicken with sliced avocado and a sprinkle of fresh cilantro, serving lime wedges on the side.

Notes

For best flavor, marinate chicken for at least 30 minutes up to 2 hours. Always allow chicken to rest after grilling before slicing to retain juiciness.
