Heat a large skillet over medium heat and add the olive oil. Once shimmering, add the chicken and cook for 6-8 minutes until golden brown. Remove from heat.
In a medium bowl, combine peanut butter, soy sauce, rice vinegar, honey, lime juice, ginger, garlic, and red pepper flakes. Whisk together until smooth.
Lay out the tortillas and spread a generous layer of peanut sauce on each.
Divide the chicken evenly among the tortillas and place down the center.
Top with shredded carrots, red bell pepper, and cucumber. Sprinkle with cilantro.
Sprinkle chopped peanuts over the top.
Roll each tortilla tightly from one end, tucking in the sides as you go.
Slice each wrap diagonally and serve immediately.
