Ingredients

For the Chicken

  • 2 breasts Boneless, skinless chicken thinly sliced
  • 1 tablespoon Olive oil

For the Peanut Sauce

  • ½ cup Creamy peanut butter
  • 2 tablespoons Soy sauce
  • 1 tablespoon Rice vinegar
  • 1 tablespoon Honey
  • 1 tablespoon Lime juice
  • 1 teaspoon Ginger grated
  • 1 clove Garlic minced
  • ¼ teaspoon Red pepper flakes adjust to taste

For the Wraps

  • 4 large Whole wheat tortillas
  • 1 cup Shredded carrots
  • 1 cup Red bell pepper thinly sliced
  • 1 cup Cucumber chopped
  • ½ cup Fresh cilantro chopped
  • ¼ cup Roasted peanuts chopped

Instructions

Step-by-Step Instructions

  • Heat a large skillet over medium heat and add the olive oil. Once shimmering, add the chicken and cook for 6-8 minutes until golden brown. Remove from heat.
  • In a medium bowl, combine peanut butter, soy sauce, rice vinegar, honey, lime juice, ginger, garlic, and red pepper flakes. Whisk together until smooth.
  • Lay out the tortillas and spread a generous layer of peanut sauce on each.
  • Divide the chicken evenly among the tortillas and place down the center.
  • Top with shredded carrots, red bell pepper, and cucumber. Sprinkle with cilantro.
  • Sprinkle chopped peanuts over the top.
  • Roll each tortilla tightly from one end, tucking in the sides as you go.
  • Slice each wrap diagonally and serve immediately.

Notes

Consider marinating the chicken in soy sauce and lime juice for improved flavor. Customize the veggies as desired.
