  • 4 large whole wheat tortillas
  • 6 slices sliced deli turkey breast opt for low-sodium

For the Spread

  • 1 cup hummus classic or flavored
  • 1 tablespoon fresh lemon juice to enhance flavors

  • 2 cups baby spinach leaves
  • 1 cup shredded carrots
  • 1 cup cucumber matchstick cut
  • 1 medium red bell pepper thin strips

  • Prepare the Vegetables: Rinse and dry the baby spinach, shred the carrots, slice the cucumber into matchsticks and the red bell pepper into strips. Crumble feta and chop herbs if using.
  • Warm the Tortillas: Heat a skillet over low heat. Warm each tortilla for 15–20 seconds per side until flexible. Optionally brush with olive oil.
  • Season the Hummus: Combine hummus and lemon juice in a bowl, add salt and pepper to taste. Mix until smooth.
  • Spread the Hummus: Lay a warm tortilla flat and spread about ¼ cup of hummus leaving a ½ inch border.
  • Layer the Turkey: Place 2–3 slices of turkey evenly over the hummus.
  • Add the Vegetables and Extras: Add spinach, carrots, cucumber, and bell pepper. Sprinkle with feta and herbs if using.
  • Roll the Tortilla Tightly: Starting with the edge near the veggies, roll the tortilla tightly while tucking in the filling.
  • Repeat for Remaining Tortillas: Continue assembling the remaining roll ups using the same process.
  • Slice into Roll Ups or Serve Whole: Cut into 1–1.5 inch pieces or serve whole. Secure with toothpicks for pinwheel style.
  • Chill if Desired: Wrap the whole rolls in plastic wrap and refrigerate for 20–30 minutes for easier slicing.
  • Serve and Enjoy: Arrange beautifully on a plate and garnish as desired. Serve immediately or keep in the fridge.
