  • 2 medium carrots Diced
  • 2 stalks celery Diced

  • 0.5 teaspoon chili powder

For the Protein & Greens

  • 2 cans white cannellini beans Drained and rinsed
  • 3.5 cups chicken broth Or vegetable broth
  • 2 cups fresh kale Chopped

Step-by-Step Instructions

  • Heat 2 tablespoons of vegetable oil in a large pot over medium heat. Add diced onion and sauté until translucent, about 5 minutes.
  • Add minced garlic, diced carrots, and diced celery. Cook for another 5 minutes until vegetables are tender.
  • Stir in ½ teaspoon of Italian seasoning and ½ teaspoon of chili powder, letting the spices bloom for 1 minute.
  • Combine 2 cans of drained white cannellini beans and 3 ½ cups of chicken broth. Stir and bring to a gentle boil for about 5 minutes.
  • Reduce heat to low and simmer uncovered for 15 minutes, stirring occasionally.
  • Add 2 cups of chopped fresh kale and cook for an additional 5 minutes until wilted.
  • Taste and adjust seasoning with salt and pepper before serving.
  • Serve hot, optionally garnished with a splash of lemon juice.
