Step-by-Step Instructions
Heat 2 tablespoons of vegetable oil in a large pot over medium heat. Add diced onion and sauté until translucent, about 5 minutes.
Add minced garlic, diced carrots, and diced celery. Cook for another 5 minutes until vegetables are tender.
Stir in ½ teaspoon of Italian seasoning and ½ teaspoon of chili powder, letting the spices bloom for 1 minute.
Combine 2 cans of drained white cannellini beans and 3 ½ cups of chicken broth. Stir and bring to a gentle boil for about 5 minutes.
Reduce heat to low and simmer uncovered for 15 minutes, stirring occasionally.
Add 2 cups of chopped fresh kale and cook for an additional 5 minutes until wilted.
Taste and adjust seasoning with salt and pepper before serving.
Serve hot, optionally garnished with a splash of lemon juice.
