In a medium-sized mixing bowl, combine Greek yogurt, creamy peanut butter, honey or maple syrup, and vanilla extract. Stir until smooth.
If customizing, gently fold in mini chocolate chips and/or crushed nuts.
Prepare the molds or muffin tin by greasing them lightly with non-stick spray or oil.
Spoon the yogurt and peanut butter mixture into each mold or muffin tin cavity, filling them to the top.
Smooth the tops using a spoon or fingers and add extra toppings if desired.
Place the molds flat in the freezer and freeze for at least 4 hours until solid.
To remove, press the bottoms of silicone molds or run warm water over the muffin tin.
Store the bites in an airtight container in the freezer for up to 2 months.
Notes
These bites are best enjoyed frozen; avoid reheating to maintain texture.
