In a medium mixing bowl, combine 2 ½ cups of shredded coconut with 1 cup of sweetened condensed milk. Mix thoroughly for 2–3 minutes.
Roll small portions of the coconut mixture into balls, about 1 inch in diameter, and place them on a parchment-lined baking sheet. Refrigerate for 30 minutes.
In a microwave-safe bowl, melt 8 ounces of chopped dark chocolate in 30-second intervals, stirring until smooth.
Dip each chilled truffle in melted chocolate, tap off excess, and place back on parchment-lined baking sheet.
Refrigerate for another 30 minutes to allow the chocolate to harden.
