Chickpeas

  • 1 can Canned chickpeas drained and rinsed
  • 1 tablespoon Olive oil for seasoning
  • 1 teaspoon Paprika or smoked paprika
  • 1 teaspoon Cumin
  • 0.5 teaspoon Cayenne pepper adjust to taste

Salad

  • 4 cups Mixed greens arugula, spinach, and romaine
  • 1 cup Cherry tomatoes halved
  • 0.5 cup Red onion thinly sliced
  • 1 cup Cucumber chopped
  • 1 cup Red bell pepper chopped

Dressing

  • 1 ripe Avocado
  • 2 tablespoons Fresh lime juice
  • 1 tablespoon Honey or maple syrup use maple for vegan option
  • 1-2 tablespoons Water adjust for consistency
  • to taste Fresh cilantro or parsley for garnish

Instructions

Preparation Steps

  • Preheat your oven to 400°F (200°C) and prepare a baking sheet with parchment paper.
  • In a bowl, mix drained chickpeas with olive oil, paprika, cumin, cayenne, salt, and pepper until evenly coated.
  • Spread chickpeas on the baking sheet and bake for 20-25 minutes, shaking the pan halfway through.
  • In a large bowl, combine mixed greens, cherry tomatoes, red onion, cucumber, and red bell pepper.
  • Blend avocado, lime juice, honey (or maple syrup), and water in a blender until creamy. Adjust consistency with water as needed.
  • Allow baked chickpeas to cool briefly, then add them to the salad bowl.
  • Drizzle avocado dressing over the salad, toss gently to combine.
  • Garnish with cilantro or parsley and serve immediately.

Notes

Store leftovers in an airtight container for up to 3 days, keeping the dressing separate for freshness.
