For the Croquettes

  • 2 cups Leftover Mashed Potatoes or freshly mashed
  • 8 oz Cream Cheese Neufchâtel can be used
  • 2 large Eggs acts as a binder
  • 3 tablespoons Parmesan Cheese adds flavor
  • 0.5 teaspoon Onion Powder enhances flavor
  • 0.5 cup Cheddar Cheese finely shredded, can substitute with Monterey Jack
  • 1.67 cups Italian Bread Crumbs gluten-free option available

For Cooking

  • tablespoons Oil canola or vegetable oil

Instructions

Preparation Steps

  • In a large mixing bowl, combine leftover mashed potatoes and cream cheese. Blend until smooth and creamy, about 2-3 minutes.
  • Add eggs, Parmesan cheese, cheddar cheese, and onion powder. Mix thoroughly for another 2-3 minutes.
  • Fold in Italian bread crumbs until evenly distributed, about 1 minute.
  • Mist bunny-shaped silicone molds with oil and sprinkle bread crumbs into each mold.
  • Spoon the potato mixture into each bunny mold, pressing gently to fill.
  • Sprinkle the remaining breadcrumbs on top of each filled mold and pat down lightly.
  • Mist the tops with oil and place in the freezer for at least 1 hour.
  • For frying, heat oil in a skillet over medium heat and fry the croquettes for 2 minutes on each side until golden brown.
  • For baking, preheat oven to 400°F (205°C) and arrange on a baking sheet. Bake for 11-12 minutes, flipping halfway.
