  • 24 ounces Tomato Sauce Use high-quality for best flavor
  • 14.5 ounces Diced Tomatoes Can use crushed tomatoes instead
  • 1 tablespoon Italian Seasoning Can use separate basil and oregano

For the Noodles

  • 9 sheets Lasagna Noodles Broken into pieces

For the Cheesy Layers

  • 15 ounces Ricotta Cheese Can substitute with cottage cheese
  • 2 cups Mozzarella Cheese Can substitute with provolone
  • ½ cup Parmesan Cheese Omit for dairy-free version

For Cooking

  • 1 cup Beef Broth/Water Vegetable broth for vegetarian option

Instructions

Step-by-Step Instructions

  • Set your Instant Pot to sauté mode and add olive oil. Once shimmering, add onions and garlic, sautéing for 2-3 minutes until translucent.
  • Add ground beef, breaking it up and cooking until browned, about 5-7 minutes.
  • Pour in tomato sauce and diced tomatoes, followed by Italian seasoning, salt, and pepper. Stir and simmer for 3-5 minutes.
  • Layer half of the broken lasagna noodles over the sauce, then dollop half of the ricotta cheese over the noodles. Repeat with remaining noodles and ricotta, finishing with mozzarella and parmesan on top.
  • Pour broth or water over the layers to fully submerge the noodles. Secure the lid, set to high pressure, and cook for 10 minutes.
  • Allow pressure to release naturally for 5-10 minutes, then carefully release remaining pressure. Stir gently to combine layers.
  • Scoop into bowls, garnish with basil, parsley, or extra parmesan, and serve warm.

Notes

For best flavor, fully cook the beef, and ensure noodles are submerged for even cooking. Store leftovers properly for optimal freshness.
