Soup Base

  • 1 pound white fish fillets cod, halibut, or tilapia recommended
  • 1 tablespoon vegetable oil for sautéing
  • 1 medium onion diced
  • 3 cloves garlic minced
  • 1 tablespoon ginger grated
  • 2 cups vegetable or fish broth
  • 1 can coconut milk

Vegetables

  • 1 cup cherry tomatoes halved
  • 1 medium bell pepper sliced

Seasoning

  • 1 tablespoon fish sauce
  • 2 number limes juice and zest
  • to taste salt
  • to taste pepper

Garnishing

  • ¼ cup fresh cilantro chopped
  • 1 number lime wedges for serving

  • Cut the white fish fillets into bite-sized pieces and set aside.
  • Heat the vegetable oil over medium heat. Add onion, garlic, and ginger, and sauté for 3-4 minutes until translucent.
  • Pour in the vegetable or fish broth, bringing it to a gentle simmer for about 5 minutes.
  • Stir in the coconut milk and let the mixture return to a simmer.
  • Add cherry tomatoes and bell pepper, cooking for another 5 minutes until softened.
  • Stir in fish sauce, lime juice and zest, and season with salt and pepper to taste.
  • Add the prepared fish pieces and cook for 5-7 minutes until opaque.
  • Taste and adjust seasoning if needed before serving.
  • Ladle the soup into bowls, garnish with cilantro and lime wedges, and enjoy!
