  • Arrange the husked tomatillos, quartered onion, and unpeeled garlic cloves in a baking dish.
  • Roast the vegetables for 15-20 minutes until tomatillos are tender and slightly charred.
  • Let the veggies cool for a few minutes, then peel the roasted garlic cloves.
  • Blend the roasted tomatillos, onion, peeled garlic, jalapeños (if using), cilantro, and lime juice until smooth.
  • Adjust seasoning with salt and add olive oil if desired, then blend until silky smooth.
