Preheat your oven to 425°F (220°C) to prepare for roasting the vegetables.
Arrange the husked tomatillos, quartered onion, and unpeeled garlic cloves in a baking dish.
Roast the vegetables for 15-20 minutes until tomatillos are tender and slightly charred.
Let the veggies cool for a few minutes, then peel the roasted garlic cloves.
Blend the roasted tomatillos, onion, peeled garlic, jalapeños (if using), cilantro, and lime juice until smooth.
Adjust seasoning with salt and add olive oil if desired, then blend until silky smooth.
Transfer salsa to a serving bowl and let it chill in the refrigerator for at least an hour.
