  • In a large pot, heat 2 tablespoons of olive oil over medium heat. Once the oil shimmers, add 1 tablespoon of minced ginger and 1 tablespoon of minced garlic. Sauté for about 2 minutes, stirring constantly, until fragrant and golden.
  • Add 1 pound of chicken pieces to the pot, ensuring they're spread evenly. Cook for 5-7 minutes, turning occasionally, until the chicken is nicely browned on all sides.
  • Stir in 2 tablespoons of soy sauce and 1 teaspoon of black pepper, ensuring the chicken is well-coated. Cook for another minute.
  • Pour in 6 cups of chicken broth, stirring gently to combine all ingredients. Increase the heat to bring the mixture to a rolling boil, about 5 minutes.
  • Reduce the heat to low, allowing the pot to simmer uncovered for 15 minutes.
  • Add 2 cups of egg noodles and 3 cups of mixed vegetables to the pot. Stir well and cook for an additional 10 minutes, until the noodles are al dente.
