Ingredients

For the Shrimp

  • 1 pound shrimp peeled and deveined
  • 2 tablespoons olive oil enhances flavor
  • 1 teaspoon garlic powder
  • 1 teaspoon chili powder
  • 2 teaspoons salt
  • 1 teaspoon black pepper

For the Spicy Mango Lime Coulis

  • 1 ripe mango peeled, pitted, and chopped
  • 1 jalapeño pepper seeded and chopped
  • 3 tablespoons fresh lime juice
  • 1 tablespoon honey
  • 1 teaspoon red pepper flakes
  • 2 tablespoons chopped cilantro for garnish

Instructions

Preparation

  • In a medium bowl, combine olive oil, garlic powder, chili powder, salt, and black pepper. Whisk until well mixed.
  • Add the shrimp, tossing to coat. Allow to marinate for 15 minutes.
  • Preheat your grill to medium-high heat, around 400°F. Thread the marinated shrimp onto skewers.
  • Place skewers on the grill, cooking for about 2 to 3 minutes per side until shrimp are opaque.
  • In a blender, combine mango, jalapeño, lime juice, honey, and red pepper flakes. Blend until smooth.
  • Pour the mixture into a small saucepan and simmer for 3 to 4 minutes until thickened.
  • Arrange grilled shrimp on a platter and spoon the mango coulis over them. Garnish with cilantro.

Notes

Store leftovers in an airtight container for up to 2 days. For freezing, lay shrimp in a single layer, freeze, and then transfer to a bag for up to 3 months.
