  • 2 tablespoons Shallots finely chopped
  • 1 tablespoon Lemon zest
  • ¼ cup Fresh lemon juice
  • ½ cup Unsalted butter cut into small pieces and chilled

  • 1 tablespoon Fresh parsley chopped (optional)

  • Season the halibut fillets generously with salt and black pepper on both sides. Let the fillets rest at room temperature for about 15 minutes.
  • In a large skillet, heat 2 tablespoons of olive oil over medium-high heat until it shimmers. Place the halibut fillets in the pan, skin-side down if applicable, and cook for 4-5 minutes.
  • Remove the halibut from the skillet and keep warm on a plate.
  • In the same skillet, add 1 cup of white wine and finely chopped shallots. Increase the heat to high, bringing it to a boil and let it reduce by half for about 3 minutes.
  • Stir in 1 tablespoon of lemon zest and ¼ cup of fresh lemon juice, allowing to simmer for an additional 2 minutes.
  • Lower the heat to medium-low and gradually whisk in the chilled butter pieces, letting each piece melt before adding the next.
  • Adjust the seasoning of the sauce with salt and black pepper as needed.
  • Plate the halibut fillets, drizzling the zesty lemon beurre blanc over the top, and garnish with chopped parsley if desired.
