  • ½ teaspoon Black pepper
  • 4 cups Vegetable broth (or water)
  • 1 cup Diced tomatoes canned or fresh
  • 2 cups Chopped kale or spinach
  • 1 tablespoon Lemon juice for finishing

For Garnish

  • Fresh cilantro or parsley for sprinkling

Step-by-Step Instructions for Turmeric Lentil Soup

  • Rinse the lentils under cold water in a fine-mesh strainer.
  • In a large pot over medium heat, add olive oil and sauté chopped onion for about 5 minutes until translucent.
  • Add minced garlic and grated ginger, cooking for an additional 2 minutes.
  • Stir in turmeric, cumin, coriander, salt, and black pepper, cooking for 1 minute.
  • Add rinsed lentils and vegetable broth, bring to a boil, then reduce heat to a simmer.
  • After 15 minutes, mix in diced tomatoes and continue to simmer for 20-25 minutes until lentils are tender.
  • Once lentils are tender, stir in chopped kale or spinach and cook for an additional 5 minutes.
  • Remove from heat and add lemon juice, stirring to combine.
  • Ladle soup into bowls and garnish with fresh cilantro or parsley if desired.
