Instructions
Step-by-Step Instructions for Turmeric Lentil Soup
Rinse the lentils under cold water in a fine-mesh strainer.
In a large pot over medium heat, add olive oil and sauté chopped onion for about 5 minutes until translucent.
Add minced garlic and grated ginger, cooking for an additional 2 minutes.
Stir in turmeric, cumin, coriander, salt, and black pepper, cooking for 1 minute.
Add rinsed lentils and vegetable broth, bring to a boil, then reduce heat to a simmer.
After 15 minutes, mix in diced tomatoes and continue to simmer for 20-25 minutes until lentils are tender.
Once lentils are tender, stir in chopped kale or spinach and cook for an additional 5 minutes.
Remove from heat and add lemon juice, stirring to combine.
Ladle soup into bowls and garnish with fresh cilantro or parsley if desired.
Notes
This soup stores well in the fridge and can be frozen for future meals.
