  • 1 tablespoon Thyme
  • Salt and Pepper to taste

  • 4 cups Water
  • Lime Wedges for serving

Step-by-Step Instructions

  • In a large pot, combine the chicken, beef, and pork pieces. Season with salt, pepper, oregano, and thyme.
  • In a separate pan, heat oil over medium heat. Add onion, garlic, and bell pepper, sauté for 5 minutes.
  • Pour in 4 cups of water to the pot with seasoned meats and sautéed vegetables. Bring to a boil.
  • Reduce heat to low, cover, and let simmer for 45 minutes.
  • Add the diced potatoes, sliced plantain, and corn chunks to the pot and stir.
  • Simmer for an additional 30-40 minutes until vegetables are tender.
  • Taste and adjust seasoning with more salt and pepper if necessary.
  • Remove from heat, let sit for a few minutes to enhance flavors.
  • Serve hot in bowls, with lime wedges on the side.
