In a medium bowl, combine 1.5 cups of graham cracker crumbs, 0.5 cups of granulated sugar, and 0.5 cups of melted unsalted butter. Stir until evenly coated. Press into the bottom of a 9x13 inch baking dish and refrigerate for about 30 minutes.
In a large mixing bowl, beat 16 ounces of softened cream cheese until creamy. Gradually add 1 cup of powdered sugar and 1 teaspoon of vanilla extract, mixing until smooth.
In a separate bowl, whip 2 cups of heavy whipping cream until soft peaks form, then add 2 tablespoons of powdered sugar and whip until stiff peaks form.
Gently fold the whipped cream into the cream cheese mixture until uniform.
Pour the cheesecake filling over the crust and smooth the top. Cover and refrigerate for at least 4 hours.
In a bowl, mix 2 cups of hulled and sliced strawberries with 2 tablespoons of optional preserves and let macerate for about 15 minutes.
Once set, top the cheesecake with the macerated strawberries, slice and serve chilled.
