Instructions

Preparation

  • In a medium mixing bowl, combine powdered sugar and cocoa powder. Whisk until smooth.
  • Add corn syrup, salt, and peppermint extract. Stir until a dough-like consistency forms.
  • Dust working surface with powdered sugar and knead dough for about 1 minute.
  • Divide dough into portions, roll into balls, and flatten into discs.
  • Place discs on a lined baking sheet and freeze for about 30 minutes.
  • Melt chocolate chips in microwave, stir in coconut oil when almost melted.
  • Dip chilled patties in melted chocolate and tap off excess chocolate.
  • Return coated patties to the sheet, sprinkle with crushed peppermint if desired.
  • Refrigerate for about 20-30 minutes until chocolate hardens.
  • Store in an airtight container or serve immediately.
