Instructions
Preparation
In a medium mixing bowl, combine powdered sugar and cocoa powder. Whisk until smooth.
Add corn syrup, salt, and peppermint extract. Stir until a dough-like consistency forms.
Dust working surface with powdered sugar and knead dough for about 1 minute.
Divide dough into portions, roll into balls, and flatten into discs.
Place discs on a lined baking sheet and freeze for about 30 minutes.
Melt chocolate chips in microwave, stir in coconut oil when almost melted.
Dip chilled patties in melted chocolate and tap off excess chocolate.
Return coated patties to the sheet, sprinkle with crushed peppermint if desired.
Refrigerate for about 20-30 minutes until chocolate hardens.
Store in an airtight container or serve immediately.
