  • In a mixing bowl, combine mascarpone cheese, powdered sugar, and vanilla extract. Blend until smooth and creamy for about 2-3 minutes.
  • In a separate bowl, whisk together coconut milk and rum (or vanilla extract) until combined. Let sit for a minute.
  • Quickly dip each ladyfinger in the coconut milk mixture for 1-2 seconds. Lay them on a cutting board.
  • Place a layer of soaked ladyfingers at the bottom of your serving dish.
  • Spread half of the mascarpone mixture over the ladyfingers evenly.
  • Repeat the soaking process with the remaining ladyfingers and arrange them on top of the mascarpone layer.
  • Spread the remaining mascarpone mixture over the second layer of ladyfingers.
  • Cover and refrigerate for at least 4 hours.
  • Before serving, sprinkle toasted coconut flakes on top.
