Step-by-Step Instructions
In a mixing bowl, combine mascarpone cheese, powdered sugar, and vanilla extract. Blend until smooth and creamy for about 2-3 minutes.
In a separate bowl, whisk together coconut milk and rum (or vanilla extract) until combined. Let sit for a minute.
Quickly dip each ladyfinger in the coconut milk mixture for 1-2 seconds. Lay them on a cutting board.
Place a layer of soaked ladyfingers at the bottom of your serving dish.
Spread half of the mascarpone mixture over the ladyfingers evenly.
Repeat the soaking process with the remaining ladyfingers and arrange them on top of the mascarpone layer.
Spread the remaining mascarpone mixture over the second layer of ladyfingers.
Cover and refrigerate for at least 4 hours.
Before serving, sprinkle toasted coconut flakes on top.
