Preheat your oven to 350°F (175°C) and line your baking sheets with parchment paper.
In a medium bowl, whisk together flour, baking soda, and salt until well combined.
In a large bowl, cream together softened butter, granulated sugar, and brown sugar until light and fluffy.
Add eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
Gradually mix in the dry ingredient mixture until just combined.
Gently fold in caramel chips and chocolate chips if using.
Drop rounded portions of dough onto prepared baking sheets, spacing them 2 inches apart.
Sprinkle flaky sea salt on top of the cookie dough before baking.
Bake for 10-12 minutes, until edges are golden brown and centers are soft.
Cool on baking sheets for 5 minutes before transferring to a wire rack to cool completely.
