  • Begin by preheating your oven to 350°F (175°C). Lightly grease a medium-sized baking dish with a little olive oil or butter.
  • In a skillet over medium heat, melt 2 tablespoons of unsalted butter. Add the thinly sliced yellow onions and cook, stirring occasionally, until they turn golden brown and caramelize, about 15 to 20 minutes.
  • Once the onions are caramelized, add 1 tablespoon of balsamic vinegar and 1 teaspoon of fresh thyme leaves to the skillet. Stir for about 1 minute until the vinegar is well incorporated.
  • Take your 8 oz wheel of brie and place it in the pre-greased baking dish. Optionally slice off the top rind of the cheese before baking.
