  • Begin by lightly dredging the chicken breasts in all-purpose flour mixed with a pinch of salt and pepper. Set aside.
  • In a large skillet, heat butter and olive oil over medium heat until melted. Cook chicken until golden brown, about 6 minutes per side. Remove and set aside.
  • In the same skillet, add sliced mushrooms and cook for 4-5 minutes until tender. Add minced garlic and sauté for an additional minute.
  • Pour in chicken stock, scraping the skillet to incorporate browned bits. Simmer for 2-3 minutes, then stir in Dijon mustard and heavy cream.
  • Return chicken to the skillet and simmer in the sauce for 3-4 minutes. Adjust seasoning with salt and pepper to taste.
