Ingredients

  • 2 tablespoons olive oil
  • 1 medium onion diced
  • 3-4 cloves garlic minced
  • 1 pound lean ground beef
  • 1.5 tablespoons Italian seasoning
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • 1 tablespoon tomato paste
  • 4 cups beef broth
  • 1 jar 24 oz marinara sauce
  • 1 can 14.5 oz diced tomatoes
  • ¼ cup water
  • 10 oz lasagna noodles
  • 1.5 cups cottage cheese
  • ½ cup shaved Parmesan
  • ½ cup shredded mozzarella cheese
  • 1 cup spinach chopped
  • 2 tablespoons chopped basil

Instructions

  • Start by heating the olive oil in a large sauce pot or Dutch oven over medium heat. Add in the diced onion and minced garlic, sautéing until translucent.
  • Add the ground beef and cook until browned, seasoning with salt and pepper.
  • Stir in Italian seasoning and tomato paste, cooking for an additional 1-2 minutes.
  • Pour in beef broth, marinara sauce, water, and diced tomatoes. Bring to a gentle boil.
  • Break lasagna noodles in half and add them, covering the pot to cook for 12-15 minutes.
  • Once noodles are soft, fold in cottage cheese, mozzarella cheese, Parmesan, and chopped spinach, stirring until everything is combined.
  • Serve warm topped with cottage cheese and chopped basil.
