Preheat your oven to 350°F (175°C).
In a large pot, boil the peeled and cubed potatoes in salted water until fork-tender.
In a skillet, melt the butter and sauté the onion and celery until translucent. Add the minced garlic and cook for an additional minute.
Combine the mashed potatoes, crusty bread cubes, sautéed onion and celery, parsley, thyme, salt, and pepper in a mixing bowl.
Whisk together the chicken broth and beaten egg, then pour over the stuffing blend and mix gently.
Transfer the mixture to a greased baking dish and bake for 30 minutes until golden brown.
Notes
For a crispier top, broil for the last few minutes of baking. Customize your stuffing with add-ins like sausage or nuts for a twist.
