Step‑by‑Step Instructions
Preheat a skillet over medium heat. Cook bacon until crispy, about 6 to 8 minutes. Drain on paper towels.
In a bowl, whisk together eggs, milk, salt, and pepper until blended and frothy.
Drain excess bacon grease, leaving 1 tablespoon in the skillet. Pour egg mixture into the skillet and scramble until set, about 3 to 5 minutes.
Lay two slices of bread and sprinkle half of the cheese on each. Add scrambled eggs and bacon.
Add remaining cheese and top with the other slices of bread.
Spread butter on the outer sides of each sandwich.
Grill the sandwiches in a skillet over medium heat until golden brown, about 3 to 4 minutes.
Flip the sandwiches and cook the other side until golden and cheese is melted, about 3 to 4 minutes.
Remove from skillet and let them cool slightly. Cut each sandwich in half and serve warm.
Garnish with fresh chives or green onions before serving.
Notes
Will keep well in an airtight container in the fridge for up to 3 days. Reheat in the skillet for a crispy crust.
