Step‑by‑Step Instructions

  • Preheat a skillet over medium heat. Cook bacon until crispy, about 6 to 8 minutes. Drain on paper towels.
  • In a bowl, whisk together eggs, milk, salt, and pepper until blended and frothy.
  • Drain excess bacon grease, leaving 1 tablespoon in the skillet. Pour egg mixture into the skillet and scramble until set, about 3 to 5 minutes.
  • Lay two slices of bread and sprinkle half of the cheese on each. Add scrambled eggs and bacon.
  • Add remaining cheese and top with the other slices of bread.
  • Spread butter on the outer sides of each sandwich.
  • Grill the sandwiches in a skillet over medium heat until golden brown, about 3 to 4 minutes.
  • Flip the sandwiches and cook the other side until golden and cheese is melted, about 3 to 4 minutes.
  • Remove from skillet and let them cool slightly. Cut each sandwich in half and serve warm.
  • Garnish with fresh chives or green onions before serving.

Notes

Will keep well in an airtight container in the fridge for up to 3 days. Reheat in the skillet for a crispy crust.
