  • In a mixing bowl, whisk together the chicken stock, soy sauce, honey, hoisin sauce, cornstarch, and rice wine vinegar until smooth. Set aside.
  • Place the bite-sized pieces of chicken into another bowl and sprinkle in the cornstarch. Toss until evenly coated.
  • Heat oil in a deep fryer or large skillet over medium-high heat. Add chicken pieces and fry for about 2-3 minutes until golden brown. Transfer to a paper towel-lined plate.
  • In the same pan, heat 1 tablespoon of oil. Add minced garlic, ginger, and roasted cashews. Sauté for 1 minute until fragrant.
  • Pour the prepared sauce mixture into the sautéed aromatics. Cook, stirring occasionally, until the sauce bubbles and thickens, about 2-3 minutes.
  • Add the crispy chicken back into the pan and toss until thoroughly coated in the sauce. Fold in sliced green onions and serve hot.
