Directions

  • Preheat oven to 350°F (175°C) and grease a 12-cup muffin tin.
  • In a large bowl, whisk eggs until blended and frothy.
  • Gently fold in cottage cheese until well incorporated.
  • Add shredded cheddar cheese and mix thoroughly.
  • Incorporate chopped spinach, red bell pepper, garlic powder, salt, and black pepper.
  • Mix baking powder with a teaspoon of water, then add to the egg mixture.
  • Pour in olive oil and mix until smooth.
  • Fill the muffin tin cups nearly to the top with the mixture.
  • Bake for 18 to 20 minutes until set and lightly golden.
  • Allow to cool for about 5 minutes, then release from the tin.
