Directions
Preheat oven to 350°F (175°C) and grease a 12-cup muffin tin.
In a large bowl, whisk eggs until blended and frothy.
Gently fold in cottage cheese until well incorporated.
Add shredded cheddar cheese and mix thoroughly.
Incorporate chopped spinach, red bell pepper, garlic powder, salt, and black pepper.
Mix baking powder with a teaspoon of water, then add to the egg mixture.
Pour in olive oil and mix until smooth.
Fill the muffin tin cups nearly to the top with the mixture.
Bake for 18 to 20 minutes until set and lightly golden.
Allow to cool for about 5 minutes, then release from the tin.
Serve warm or store in an airtight container.
