Ingredients

For the Bites

  • 2 medium Potatoes peeled and diced
  • 1 cup Broccoli fresh florets
  • ½ cup Parmesan cheese grated
  • ½ cup Breadcrumbs
  • 1 large Egg

For Seasoning

  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • ½ teaspoon Salt
  • ¼ teaspoon Black pepper
  • ½ teaspoon Paprika

For Drizzling

  • 2 tablespoons Olive oil or spray

Directions

  • Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • Boil diced potatoes for about 10 minutes, then add broccoli florets for an additional 3 minutes. Drain and cool slightly.
  • Mash the drained potatoes and broccoli in a large mixing bowl, keeping some texture.
  • Mix in parmesan cheese, breadcrumbs, egg, garlic powder, onion powder, salt, black pepper, and paprika until combined.
  • Form small bites or patties, about 1 inch, and place them on the baking sheet with space in between.
  • Spray or drizzle bites with olive oil for a crispy texture.
  • Bake for 20-25 minutes until golden and firm. Check frequently for doneness.
  • Allow to cool on the baking sheet for a few minutes before serving.

Notes

Cut potatoes uniformly for even cooking and avoid over-mashing for a chunky texture. Let the bites cool before serving for better flavor and texture.
