In a small mixing bowl, combine olive oil, chili powder, paprika, cayenne pepper, garlic powder, salt, and pepper. Whisk until smooth.
Rub the marinade evenly over both sides of the chicken breasts. Marinate for at least 15 minutes.
Preheat your grill to medium-high heat.
Grill the marinated chicken breasts for about 6-7 minutes on each side or until it reaches an internal temperature of 165°F.
Remove the chicken and let it rest on a cutting board for 5 minutes.
Slice the chicken into thin strips.
Lay out flour tortillas and layer with lettuce, diced tomato, chicken strips, cheddar cheese, sour cream, and salsa.
Fold the sides of each tortilla inward and roll from the bottom to the top.
