Instructions

Cooking Steps

  • Cook the rice noodles according to the package instructions, about 4-6 minutes until tender but firm. Drain and rinse under cold water to stop cooking.
  • In a large skillet, heat vegetable oil over medium-high heat. Add garlic and ginger, stirring for about 30 seconds until fragrant.
  • Add ground chicken, breaking it up. Cook for about 5 minutes, stirring occasionally until browned. Season with salt and pepper.
  • Stir in red bell pepper and carrot, cooking for an additional 2-3 minutes until vegetables are tender-crisp.
  • Add cooked rice noodles, sweet chili sauce, soy sauce, rice vinegar, and sesame oil. Toss until noodles are heated through, about 2 minutes.
  • Stir in most of the green onions, reserving some for garnish. Warm for another minute.
  • Serve noodles on plates, garnishing with reserved green onions. Enjoy warm.
