  • ½ teaspoon black pepper
  • 1 teaspoon salt

Step-by-Step Instructions

  • Preheat your oven to 325°F (165°C) and prepare a roasting pan with a roasting rack inside.
  • Score the surface of the ham in a diamond pattern for the glaze to penetrate.
  • Place the ham on the roasting rack with the cut side facing down, lightly cover with foil.
  • In a saucepan, combine maple syrup, bourbon, brown sugar, Dijon mustard, cinnamon, cloves, black pepper, and salt. Simmer for 5-7 minutes until thickened.
  • After 1.5 hours of cooking, remove the foil and brush the glaze generously over the ham.
  • Continue roasting for an additional 30 minutes, basting every 10 minutes.
  • Consider studding the ham with whole cloves 15 minutes before the cooking ends.
  • Remove the ham from the oven and let it rest for at least 15 minutes before slicing.
  • Slice the ham and serve it warm, drizzled with any remaining glaze.
