  • Preheat your oven to 400°F (200°C).
  • In a small mixing bowl, whisk together the pure maple syrup, Dijon mustard, soy sauce, minced garlic, fresh thyme leaves, black pepper, and salt until well-combined.
  • Place the pork tenderloin in a resealable plastic bag or shallow dish and pour the marinade over it. Seal tightly and refrigerate for at least 30 minutes.
  • Remove the pork from the marinade, pat dry with paper towels.
  • In a large oven-safe skillet, heat olive oil over medium-high heat until shimmering.
  • Sear the pork tenderloin for about 3-4 minutes on each side until golden-brown.
  • Pour the reserved marinade over the seared pork in the skillet.
  • Roast in the preheated oven for about 15-20 minutes, or until the internal temperature reaches 145°F (63°C).
  • Let the pork rest for 5-10 minutes before slicing.
  • Slice the pork tenderloin into medallions and drizzle pan juices over the slices. Garnish with fresh thyme sprigs if desired.
