Preheat your oven to 375°F (190°C).
Roll out the thawed puff pastry sheets to about ⅛ inch thickness.
Cut the puff pastry into squares or circles using a knife or a 3-inch round cookie cutter.
Place the cut-out pastry pieces onto a baking sheet lined with parchment paper.
In the center of each pastry piece, place a small cube of Brie cheese.
Spoon about one teaspoon of cranberry sauce over the Brie in each pastry.
Lightly sprinkle each bite with salt and pepper to taste, and add fresh thyme leaves if using.
Fold the corners of each pastry over the filling, or leave them open for a rustic look.
Brush the tops of your pastry with the beaten egg.
