  • ¼ cup Mayonnaise
  • 1 tablespoon Cajun seasoning
  • 1 teaspoon Lemon juice

  • Preheat your oven to 425°F (220°C).
  • Wash and dry the mini potatoes thoroughly. Carefully slice each potato thinly, leaving about ¼ inch intact at the bottom.
  • Transfer the sliced potatoes to a mixing bowl. Drizzle 3 tablespoons of olive oil over them and toss gently.
  • Sprinkle 1 tablespoon each of sea salt, black pepper, garlic powder, and onion powder over the potatoes and toss to season.
  • Arrange the seasoned potatoes on a parchment-lined baking sheet, spaced evenly apart.
  • Bake in the preheated oven for 30-35 minutes until the edges are crispy and the insides are tender.
  • While baking, prepare the Cajun dip by mixing sour cream, mayonnaise, Cajun seasoning, and lemon juice in a bowl. Adjust seasoning with salt and pepper.
  • Once the potatoes are out of the oven, let them cool slightly and sprinkle with fresh parsley. Serve alongside the Cajun dip.
