Ingredients

For the Pastry

  • 1 sheet Puff pastry thawed

For the Filling

  • 8 oz Brie cheese cut into squares
  • 2 tablespoon Honey
  • 1 tablespoon Fresh thyme leaves optional
  • to taste Salt
  • to taste Pepper

  • 1 cup Pistachios finely chopped
  • 1 large Egg beaten for egg wash

Instructions

Step-by-Step Instructions

  • Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • On a lightly floured surface, roll out the thawed puff pastry sheet until smooth and slightly thinner, about ¼ inch thick.
  • Cut the rolled puff pastry into 2-inch squares.
  • Place a square of Brie cheese in the center of each puff pastry square.
  • Drizzle each piece of Brie with honey, then sprinkle lightly with salt, pepper, and fresh thyme, if using.
  • Fold the corners of the puff pastry squares over the Brie and pinch edges to seal tightly.
  • Coat each sealed Brie bite in finely chopped pistachios.
  • Transfer the coated Brie bites to your prepared baking sheet, spacing them about an inch apart.
  • Using a pastry brush, apply the beaten egg over the tops of each pastry bit.
  • Bake for 15-20 minutes until the pastry has puffed up and turned golden brown.
  • Allow the bites to cool for a few minutes before serving.

Notes

These bites can be made ahead and frozen for convenience. Bake directly from the freezer, adding a few extra minutes to the baking time.
