Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
On a lightly floured surface, roll out the thawed puff pastry sheet until smooth and slightly thinner, about ¼ inch thick.
Cut the rolled puff pastry into 2-inch squares.
Place a square of Brie cheese in the center of each puff pastry square.
Drizzle each piece of Brie with honey, then sprinkle lightly with salt, pepper, and fresh thyme, if using.
Fold the corners of the puff pastry squares over the Brie and pinch edges to seal tightly.
Coat each sealed Brie bite in finely chopped pistachios.
Transfer the coated Brie bites to your prepared baking sheet, spacing them about an inch apart.
Using a pastry brush, apply the beaten egg over the tops of each pastry bit.
Bake for 15-20 minutes until the pastry has puffed up and turned golden brown.
Allow the bites to cool for a few minutes before serving.
Notes
These bites can be made ahead and frozen for convenience. Bake directly from the freezer, adding a few extra minutes to the baking time.
