Instructions
Step‑by‑Step Instructions
Preheat your oven to 425°F (220°C).
Combine the halved baby potatoes with olive oil, dried oregano, salt, and black pepper in a large mixing bowl.
Spread the seasoned baby potatoes in a single layer on a baking sheet and scatter the whole garlic cloves among them.
Create a space in the center of the baking sheet for the block of feta cheese.
Roast in the preheated oven for 25-30 minutes until the potatoes are golden brown.
Remove from the oven, let cool for 5 minutes, then mash the feta and garlic together in the center to create a creamy sauce.
Garnish with chopped parsley and red pepper flakes before serving.
