  • 1.5 pounds Baby potatoes halved
  • 3 tablespoons Extra virgin olive oil
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper

For the Feta & Garlic

  • 8 ounces Feta cheese block
  • 6 cloves Garlic cloves whole and peeled
  • 1 teaspoon Dried oregano

For Garnish

  • 0.25 cup Fresh parsley chopped
  • 1 teaspoon Red pepper flakes optional

Instructions

Step‑by‑Step Instructions

  • Preheat your oven to 425°F (220°C).
  • Combine the halved baby potatoes with olive oil, dried oregano, salt, and black pepper in a large mixing bowl.
  • Spread the seasoned baby potatoes in a single layer on a baking sheet and scatter the whole garlic cloves among them.
  • Create a space in the center of the baking sheet for the block of feta cheese.
  • Roast in the preheated oven for 25-30 minutes until the potatoes are golden brown.
  • Remove from the oven, let cool for 5 minutes, then mash the feta and garlic together in the center to create a creamy sauce.
  • Garnish with chopped parsley and red pepper flakes before serving.
