  • In a bowl, cream together the butter, granulated sugar, and brown sugar until fluffy.
  • Beat in the eggs one at a time, then stir in the vanilla extract.
  • In another bowl, whisk together flour, baking soda, and salt.
  • Gradually add dry ingredients to the wet mixture until just combined.
  • Fold in the chocolate chips evenly into the dough.
  • Press graham cracker pieces into the bottom of each muffin well.
  • Fill each muffin well about two-thirds full with cookie dough.
  • Bake for about 10 minutes until edges are golden brown.
  • Top each cookie cup with a halved marshmallow, cut side up.
  • Broil on high for 1-2 minutes until marshmallows are golden brown.
  • Let cool in the pan for 5 minutes before transferring to a wire rack.
