Ingredients

For the Cake

  • 1 cup unsalted butter softened
  • 1 cup granulated sugar
  • 1 cup semisweet chocolate chips melted
  • 3 large eggs
  • 1 cup sour cream or Greek yogurt
  • 2 cups all-purpose flour
  • 0.75 cup dark unsweetened cocoa powder
  • 1 tablespoon baking powder
  • 0.5 teaspoon kosher salt
  • 1 cup whole milk
  • 1 cup espresso or brewed coffee
  • 1 teaspoon vanilla extract

For the Layers

  • 6 graham cracker halves

For the Meringue Topping

  • 3 large egg whites
  • 0.5 cup granulated sugar

Instructions

Preparation

  • Preheat your oven to 350°F (175°C) and prepare a loaf pan.
  • Cream together the butter and sugar until light and fluffy.
  • Incorporate the melted chocolate into the butter-sugar mixture.
  • Add the eggs one at a time, then mix in the sour cream until smooth.
  • Combine the dry ingredients in another bowl and set aside.
  • Mix the milk, coffee, and vanilla together separately.
  • Gradually add the dry ingredients and milk mixture to the batter, alternating.
  • Layer one-third of the batter in the pan, followed by graham crackers, then repeat.
  • Bake in the preheated oven for 35-40 minutes until done.
  • Prepare the meringue by whisking egg whites and sugar in a double boiler.
  • Whip the meringue until stiff peaks form and then toast with a kitchen torch.
  • Allow the cake to cool before slicing and serving.

Notes

For best results, keep ingredients at room temperature before mixing and avoid overmixing.
