  • 1 teaspoon Nutmeg Warm spice to elevate flavors.

For the Pastry

  • 1 sheet Puff pastry Thawed.
  • 1 large Beaten egg For brushing.

  • In a large skillet, heat olive oil over medium heat. Add onion and sauté until translucent, about 5 minutes. Stir in garlic and cook until fragrant, about 30 seconds.
  • Add chopped spinach to the skillet, cooking until completely wilted, about 2-3 minutes. Remove from heat and allow to cool slightly.
  • In a mixing bowl, combine the cooled spinach mixture with ricotta cheese, crumbled feta, salt, black pepper, and nutmeg. Mix until well incorporated.
  • Preheat your oven to 400°F (200°C).
  • Roll out the thawed puff pastry, then cut into squares or circles, each about 3 inches in size.
  • Place a spoonful of filling in the center of each pastry piece. Fold over and seal edges with a fork.
  • Brush the tops with beaten egg for a golden color.
  • Arrange on a baking sheet lined with parchment and bake for 15-20 minutes until golden brown.
  • Let cool slightly on a wire rack before serving.
