  • 1 pound ground beef
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 2 garlic cloves, minced
  • 2 tablespoons Worcestershire sauce
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • 1 cup beef broth

Batter

  • 1 cup all-purpose flour
  • 1 cup milk
  • 3 large eggs
  • ½ teaspoon salt
  • 3 tablespoons butter melted

  • In a large skillet over medium heat, cook ground beef until browned, about 5-7 minutes. Drain excess fat.
  • Stir in chopped onion, diced carrots, and diced celery. Sauté for about 5-7 minutes until tender.
  • Mix in minced garlic, Worcestershire sauce, tomato paste, dried thyme, salt, and pepper. Stir for 1-2 minutes until garlic is fragrant.
  • Pour in beef broth and simmer for 5-10 minutes, stirring occasionally until thickened.
  • In a mixing bowl, whisk together flour, milk, eggs, and salt until smooth. Let batter rest for 30 minutes.
  • Preheat oven to 425°F (220°C).
  • Melt butter in muffin tin in the oven for 2-3 minutes until bubbling.
  • Pour Yorkshire pudding batter into muffin cups halfway, then add meat filling on top.
  • Bake for 20-25 minutes until puffed and golden-brown. Avoid opening the oven during baking.
  • Cool for a minute before serving, garnished with fresh parsley if desired.
