Preparation Steps
In a large skillet over medium heat, cook ground beef until browned, about 5-7 minutes. Drain excess fat.
Stir in chopped onion, diced carrots, and diced celery. Sauté for about 5-7 minutes until tender.
Mix in minced garlic, Worcestershire sauce, tomato paste, dried thyme, salt, and pepper. Stir for 1-2 minutes until garlic is fragrant.
Pour in beef broth and simmer for 5-10 minutes, stirring occasionally until thickened.
In a mixing bowl, whisk together flour, milk, eggs, and salt until smooth. Let batter rest for 30 minutes.
Preheat oven to 425°F (220°C).
Melt butter in muffin tin in the oven for 2-3 minutes until bubbling.
Pour Yorkshire pudding batter into muffin cups halfway, then add meat filling on top.
Bake for 20-25 minutes until puffed and golden-brown. Avoid opening the oven during baking.
Cool for a minute before serving, garnished with fresh parsley if desired.
