  • Brown the beef in a large Dutch oven with olive oil for 5-7 minutes until caramelized.
  • Sauté pearl onions and sliced carrots in the same pot for about 5 minutes.
  • Add minced garlic and sauté for another minute until aromatic.
  • Sprinkle flour over the vegetables, cook for 1-2 minutes.
  • Mix in tomato paste, thyme, bay leaf, red wine, and beef broth, stirring well.
  • Combine the browned beef back into the pot, bring to a simmer, cover, and cook for 3-4 hours on low heat.
  • Season with salt and pepper to taste, garnish with parsley, and serve.
