  • In a large pot, bring salted water to a boil and add 400 g of rigatoni pasta. Cook according to package instructions until al dente, about 10-12 minutes. Drain the pasta while reserving a cup of pasta water.
  • In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add 500 g of Italian sausage, breaking it apart as it browns, about 5-7 minutes until fully cooked.
  • Add 1 medium diced onion and 3 cloves of minced garlic to the skillet. Sauté for about 3-4 minutes until the onion is translucent.
  • Pour in a 400 g can of crushed tomatoes, 1 cup of heavy cream, and 1 cup of chicken broth. Stir in 1 teaspoon of Italian seasoning and optional red pepper flakes. Simmer for about 10 minutes.
  • Add the cooked rigatoni to the skillet with the sauce, tossing gently to coat. Adjust the consistency with reserved pasta water if needed.
  • Sprinkle ½ cup of grated Parmesan cheese over the pasta and stir until the cheese melts and the sauce is smooth.
  • Serve the rigatoni hot, garnished with fresh basil leaves.
