Ingredients

  • 1 pound boneless skinless chicken breast
  • 2 tablespoons olive oil
  • 2 tablespoons Cajun seasoning
  • 3 cloves minced garlic
  • 4 cups chicken broth
  • 1 cup half and half
  • 1 teaspoon salt
  • ½ teaspoon ground black pepper
  • 1 teaspoon garlic powder
  • 12 ounces uncooked fettuccini pasta
  • 1 cup grated Parmesan cheese

Instructions

  • In a large pot, heat 2 tablespoons of olive oil over medium-high heat.
  • Add 1 pound of boneless skinless chicken breast, cut into bite-sized pieces, into the pot.
  • Stir in 3 minced garlic cloves and cook for an additional minute.
  • Pour in 4 cups of chicken broth and 1 cup of half and half.
  • Introduce 12 ounces of uncooked fettuccini to the pot.
  • Cover the pot and bring the mixture to a boil over high heat.
  • Remove the pot from heat and add 1 cup of grated Parmesan cheese, stirring until melted.

Notes
