Ingredients

  • 8 oz cream cheese
  • ½ cup unsalted butter
  • 2 cups powdered sugar
  • ½ cup freeze-dried raspberries
  • 1 teaspoon lemon zest

Instructions

  • Sift the powdered sugar into a bowl and set it aside.
  • Grind the freeze-dried raspberries into a fine crumb using a food processor.
  • Beat the softened unsalted butter on high speed for about 2 minutes until it becomes light and creamy.
  • Add the room temperature cream cheese to the butter and mix on high for 1 minute.
  • Incorporate half the sifted powdered sugar, mixing on low until just combined.
  • Mix in the remaining powdered sugar.
  • Fold in the ground freeze-dried raspberries and lemon zest. Mix on high until your frosting is creamy and beautifully tinted.

Notes

  • Ensure both butter and cream cheese are at room temperature for easy mixing.
  • Start mixing on low after adding powdered sugar to prevent a sugary cloud.
  • Be careful not to over mix once all ingredients are combined.
  • Opt for high-quality freeze-dried raspberries for the best flavor.
  • Store leftover frosting in an airtight container in the fridge.
