  • 3 tablespoons Olive Oil or avocado oil
  • 8 cloves Garlic minced

  • 1 cup Parmesan Cheese grated + ¼ cup for topping

  • 2 tablespoons Unsalted Butter can skip for dairy-free

Step-by-Step Instructions

  • Preheat your oven to 400°F (200°C). Prepare a baking sheet lined with parchment paper.
  • Wash and slice the red potatoes into quarters and place them in a mixing bowl.
  • Add olive oil, minced garlic, ¾ cup of grated parmesan cheese, salt, and pepper to the bowl. Toss to coat the potatoes.
  • Spread the coated potatoes in a single layer on the baking sheet, cut side down, and sprinkle with remaining parmesan cheese.
  • Roast the potatoes for about 25 to 30 minutes until golden brown and tender on the inside.
  • Melt the unsalted butter and drizzle it over the roasted potatoes, then toss with fresh parsley.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. It's best not to freeze these potatoes, as freezing can make them soggy upon reheating. Reheat in the oven at 350°F (175°C) for 10-15 minutes to retain crispiness.
