Ingredients

  • 1 ½ cups plain all-purpose flour
  • 1 cup caster superfine sugar
  • 2 teaspoon baking powder
  • ½ teaspoon fine salt
  • ½ cup unsalted butter softened
  • 2 large eggs
  • 1 cup full-cream whole milk
  • cup vegetable oil
  • ½ cup Greek yogurt or sour cream
  • 1 teaspoon vanilla extract or vanilla bean paste
  • 2-3 drops pink and red food gel
  • 2 teaspoon strawberry flavoring
  • 2-3 drops yellow food gel
  • 2 teaspoon mango flavoring
  • 2 tablespoon tequila optional
  • 3-4 cups American buttercream frosting or Swiss meringue buttercream frosting
  • 2-3 drops pink and red food gel for frosting
  • 2 teaspoon strawberry flavoring for frosting
  • 2 teaspoon yellow and mango flavoring for frosting
  • ½ cup granulated sugar for decorations
  • 2 limes cut into wedges
  • 1 cup strawberries washed & halved

Instructions

  • Preheat your oven to 350°F (175°C) and line a standard cupcake pan with paper liners.
  • In a large mixing bowl, whisk together the plain all-purpose flour, caster sugar, baking powder, and fine salt until well combined.
  • Carefully divide your batter into two separate bowls. To one bowl, add the strawberry flavoring and a few drops of pink and red food gel. In the other bowl, incorporate the mango flavoring and yellow food gel.
  • Using a spoon or ice cream scoop, alternately fill the prepared cupcake liners with the two batters, creating a marbled effect.
  • Bake your cupcakes in the preheated oven for about 18-20 minutes or until a toothpick inserted into the center comes out clean.
  • Once baked, remove the cupcakes from the oven and let them cool in the pan for about 5 minutes before transferring them to a wire rack to cool completely.
  • While the cupcakes cool, prepare your frosting.
  • Once the cupcakes are cooled, lightly coat the rims with water and roll them in granulated sugar.
  • Pipe your beautifully colored frosting onto each cupcake using an open star tip, creating appealing swirls.
  • Top your frosted cupcakes with lime wedges and halved strawberries for a fresh look.

Notes

  • Select Fresh Ingredients: Always use fresh strawberries and mangoes for the best flavor.
  • Divide Batter Wisely: Ensure even distribution of colors for a beautiful marbled effect.
  • Watch the Baking Time: Start checking for doneness at 18 minutes.
  • Cool Completely: Allow cupcakes to cool fully before frosting.
  • Customize Your Decoration: Experiment with different fruits or edible flowers.
