Preparation Steps
Preheat your oven to 350°F (175°C) and grease a 9x5-inch loaf pan.
In a medium bowl, whisk together the dry ingredients: flour, baking powder, baking soda, salt, cinnamon, nutmeg, and cloves.
In a large mixing bowl, cream the butter and sugar for 3-4 minutes until light and fluffy.
Add the eggs one at a time, mixing well after each addition.
Add in the eggnog, vanilla extract, and rum extract (if using) and mix until smooth.
Gradually stir in the dry mixture until just combined.
Fold in the chopped nuts if desired.
Pour the batter into the prepared loaf pan and spread it evenly.
Bake for 50-60 minutes, until a toothpick inserted comes out clean.
Allow to cool in the pan for 10-15 minutes before transferring to a wire rack.
Dust with powdered sugar before serving, if desired.
