Preparation Steps

  • Preheat your oven to 350°F (175°C) and grease a 9x5-inch loaf pan.
  • In a medium bowl, whisk together the dry ingredients: flour, baking powder, baking soda, salt, cinnamon, nutmeg, and cloves.
  • In a large mixing bowl, cream the butter and sugar for 3-4 minutes until light and fluffy.
  • Add the eggs one at a time, mixing well after each addition.
  • Add in the eggnog, vanilla extract, and rum extract (if using) and mix until smooth.
  • Gradually stir in the dry mixture until just combined.
  • Fold in the chopped nuts if desired.
  • Pour the batter into the prepared loaf pan and spread it evenly.
  • Bake for 50-60 minutes, until a toothpick inserted comes out clean.
  • Allow to cool in the pan for 10-15 minutes before transferring to a wire rack.
  • Dust with powdered sugar before serving, if desired.
