In a large skillet, heat vegetable oil over medium-high heat and sear the pork belly fat side down for about 5 minutes.
Whisk together the glaze ingredients in a bowl until well combined.
Transfer the pork belly to the roasting pan, skin side up, and coat half of the prepared glaze over the top.
Roast in the preheated oven for 20 minutes.
After 20 minutes, reduce the oven temperature to 350°F (175°C) and continue roasting for an additional 40 minutes, basting with remaining glaze every 15 minutes.
Let the pork belly rest for about 10 minutes before slicing.
